Best Cookies Ever? Maybe!!

Pure Lust Cookies -- thanks to Jen for the recipe! I'm totally going to win the bake-off tomorrow.

1/2 cup rolled oats
2 1/4 cups all purpose flour
1 1/2 teaspoons baking soda
1 tsp salt
1/8 tsp cinnamon (I think you could use a bit more to make them more cinnamon-y)
1 cup softened butter (or 2 sticks)
3/4 cup packed brown sugar
3/4 cup granulated sugar
2 tsps vanilla extract
1/2 tsp lemon juice
2 eggs
3 cups semisweet chocolate chips
1 1/2 cups nuts *if desired*
1. Preheat oven to 350 degrees.
2. Grind oats in a food processor or blender until fine; then combine with the flour, baking soda, salt, and cinnamon in a medium bowl.
3. In another medium bowl, use an electric mixer to cream together the butter, sugars, vanilla, and lemon juice. Then add the eggs and mix until smooth.
4. Stir the dry ingredients into the wet mixture; blend well.
5. Add chocolate chips and nuts; stir this by hand until well mixed.
6. Drop rounded 1/4 cup portions of dough onto an ungreased cookie sheet about 2 inches apart. (I used less dough per cookie since I wanted to make more -- I just baked them for slightly less time.)
7. Bake for 16-18 minutes at 350. Cookies should be light brown outside and soft in the middle.
8. If you want to keep them soft, store in a sealed container after they've cooled.
For extra goodness, store in refrigerator overnight.
Makes 24 big cookies.
